Marshell is one of the favorite varieties of this coffee-growing family. With a mix of floral notes, caramel, lemon verbena and yellow fruits, Marshall is recognized for its similarity to Bourbon but the exclusivity of its designation of origin from the area of ​​Jaén, Peru. David Flores has been dedicated to coffee his entire life on his parents' farm. In 2018 he founded El Morito with the aim of improving the quality of his production as a team with his family and began training in specialty coffee.

Finca El Morito plays a crucial role in supporting the local community, employing more than 50 coffee farmers from the region and providing stable income to families that depend on coffee production.

At Finca El Morito they use natural and organic fertilizers, and conserve the native trees of the surrounding forest. They have implemented a wastewater treatment system (honey waters) and use coffee pulp waste for composting.

The coffee is selectively harvested , sorted without water, and fermented for 8 to 12 hours in sealed cherry without oxygen. It is then pulped and fermented on parchment for 72 hours, before being dried in transparent calamine modules for 26 to 30 days.
