Origins, heritage and effort
The story of the Flores Family begins in Cutervo, Cajamarca, where David Flores Chilcon learned to work the land from a very young age, following in the footsteps of his grandfather and father.
From the age of 6, David already knew the aroma of good coffee, grown by his family since 1922. In 2009, when David was 14 years old, the family moved to the province of San Ignacio, looking for better land and more space to expand their business. coffee production. Despite financial difficulties, David's passion for coffee never waned.
Life in San Ignacio was not easy. The Flores family faced many challenges, from lack of resources to ignorance of the processes necessary to improve the quality of their production. However, David's determination to be recognized for his work and his love of coffee led him to continue learning and improving. On a trip to Jaén, David had the opportunity to visit the Lima Coffee laboratory, where he understood the importance of harvest and post-harvest processes in the production of specialty coffee.
In 2018, with the support of his family, David founded Finca El Morito, a 35-hectare space dedicated to the production of high-quality coffee. Over time, the farm has grown and now includes 100 family producers, all committed to excellence and sustainability.
Processes and quality in harvest and post-harvest
Finca El Morito is distinguished by its meticulous production processes. Coffee is grown at an altitude of 1550 meters above sea level, where varieties such as Geisha, Bourbon, Catimor, Typica, Marshell and Caturra Amarilla are produced. The farm uses advanced techniques such as anaerobic fermentation and controlled drying to ensure superior quality.
One of the most notable processes is prolonged double fermentation, followed by drying on raised beds for 26 to 30 days. These methods allow the coffee to develop complex and balanced notes, such as cranberry, floral, chocolate, chamomile, lemon and cane sugar. Each coffee bean is treated with the utmost care, from selective harvesting to storage under optimal conditions.
